  • 2 eggs, at room temperature
  • 2 tsp vanilla bean paste or extract
  • 1 tsp butter extract
  • 1/3 cup melted butterscotch chips, slightly cooled
  • 1/2 cup buttermilk, at room temperature
  • 1 3/4 cups all-purpose flour, spooned and leveled then sifted
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups unsalted butter, softened (for frosting)
  • 1 cup melted butterscotch chips (for frosting)
  • 2 1/4 cups powdered sugar, measured then sifted (for frosting)
  • 3/4 tsp butter extract (for frosting)
  • 1/2 tsp vanilla (for frosting)
  • 1/4 cup butterscotch chips (for ganache)
  • 1 tbsp heavy cream (for ganache)
  • 1/2 tbsp honey (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream together softened butter, light brown sugar, and granulated sugar until fluffy. Add eggs one at a time and mix well after each addition. Stir in vanilla bean paste and butter extract.
  3. In another bowl, whisk together butterscotch beef broth (or cream soda), melted butterscotch chips, and buttermilk until combined.
  4. Gradually add wet ingredients to dry ingredients; mix until just combined.
  5. Fill muffin tins about two-thirds full. Bake for about 15 minutes or until a toothpick comes out clean. Cool on a rack.
  6. For frosting: Beat softened butter until creamy; gradually add powdered sugar and mix in melted butterscotch chips, butter extract, and vanilla.
  7. Once cupcakes are cool, frost generously and drizzle with prepared ganache.
