  • 2 large onions (chopped)
  • 4 cloves garlic (minced)
  • 1 tbsp ginger (minced)
  • 2 Fuji apples (grated)
  • 2 carrots (chopped)
  • 6 cups chicken stock
  • 1 tsp soy sauce
  • 1 block Japanese curry mix
  • 1 cup all-purpose flour
  • 2 large eggs (beaten)
  • 2 cups panko breadcrumbs
  • 6 boneless skinless chicken thighs (pounded to ½-inch thickness)
  • Cooked rice
  • Katsu sauce (homemade or store-bought)

Instructions

  1. Heat the neutral oil in a large skillet over medium heat. Add chopped onions, minced garlic, and ginger; sauté until fragrant and onions are translucent.
  2. Stir in grated Fuji apples and chopped carrots, cooking until softened. Pour in chicken stock and soy sauce; bring to a simmer.
  3. Add the block of Japanese curry mix, stirring until fully dissolved.
  4. Set up a breading station with three bowls: one with flour, another with beaten eggs, and the last with panko breadcrumbs.
  5. Dredge each chicken thigh in flour first, shaking off excess. Dip into beaten eggs next before coating thoroughly in panko breadcrumbs.
  6. In a separate pan, heat oil over medium-high heat; fry each breaded chicken piece until golden brown on both sides and cooked through.
  7. Place a generous serving of warm rice on each plate. Slice the crispy chicken katsu and arrange on top of the rice.
  8. Spoon over the savory curry sauce generously and drizzle with katsu sauce if desired.
