  • 2 lb boneless skinless chicken thighs (or breasts)
  • 20 oz can pineapple rings + ¾ cup juice
  • â…“ cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic (minced)
  • 1 tbsp fresh ginger (minced)
  • 3 tbsp brown sugar
  • â…“ cup ketchup
  • ½ tsp red pepper flakes
  • Fresh cilantro and green onions (for garnish)
  • Long grain white rice
  • Avocado slices

Instructions

  1. In a mixing bowl, whisk together pineapple juice, soy sauce, sesame oil, garlic, ginger, brown sugar, ketchup, and red pepper flakes until well blended.
  2. Place chicken in a resealable bag or container and pour marinade over. Seal and refrigerate for at least 30 minutes (up to 2 hours for best flavor).
  3. Preheat grill to medium heat or oven to 400°F (200°C).
  4. Remove chicken from marinade and discard marinade. Grill for about 5-7 minutes per side or bake for about 20 minutes until fully cooked (internal temp should reach 165°F).
  5. Let the chicken rest before serving over rice topped with avocado slices and garnished with cilantro and green onions.
