  • 1 pound boneless skinless chicken breasts
  • 3 cups broccoli florets
  • 1 zucchini
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 2 tablespoons olive oil divided
  • salt and fresh ground black pepper to taste
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon paprika
  • ¼ to ½ teaspoon chili powder
  • ¼ cup low sodium chicken broth (or apple juice/vinegar)
  • chopped fresh parsley for garnish

Instructions

  1. Cut chicken into 1-inch pieces, season with salt, pepper, and half of the spice mix. Drizzle with olive oil.
  2. Heat olive oil in a large skillet over medium-high heat; add chicken and cook until browned (6-8 minutes). Remove and set aside.
  3. In the same skillet, sauté onions for 2 minutes. Add broccoli, zucchini, and bell peppers; season with remaining spices and cook until crisp-tender (4-6 minutes).
  4. Pour in chicken broth; return chicken to skillet and stir everything together. Cook for an additional minute.
  5. Serve garnished with fresh parsley.
