  • 6 cups chicken stock (or vegetable stock for vegetarian version)
  • 2 tablespoons tomato paste
  • 1 head cabbage
  • 2 stalks celery
  • 2 medium carrots
  • 1 large onion
  • 1 can Great Northern beans (drained and rinsed)
  • 3 cloves garlic (minced)
  • 5 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 1 bay leaf
  • 1 teaspoon salt

Instructions

  1. Prepare your vegetables: wash and chop the cabbage into bite-sized pieces, dice the celery, carrots, and onion finely, and mince the garlic.
  2. In a large pot over medium heat, add a splash of chicken stock to prevent sticking. Sauté the onion until translucent, then stir in minced garlic until fragrant.
  3. Add chopped celery, carrots, and cabbage to the pot; cook for about 5 minutes until slightly softened.
  4. Pour in chicken stock along with tomato paste. Add Great Northern beans, thyme, bay leaf, and salt; stir well.
  5. Bring to a boil, reduce heat to low, cover pot, and simmer for about 60-90 minutes until vegetables are tender.
  6. Remove bay leaf before serving; ladle into bowls and enjoy warm.
