  • 200g granulated sugar
  • 120ml heavy cream
  • 60g unsalted butter
  • 60ml light corn syrup
  • 1 tsp vanilla extract
  • ½ tsp sea salt
  • 120ml heavy cream (for filling)
  • 50g powdered sugar
  • 1 vanilla bean or 1 tsp vanilla bean paste

Instructions

  1. In a heavy-bottomed saucepan, combine sugar, heavy cream, corn syrup, and butter. Stir over medium heat until the sugar dissolves.
  2. Attach a candy thermometer and cook without stirring until it reaches 245°F (118°C).
  3. Remove from heat, stir in vanilla extract and sea salt.
  4. In a mixing bowl, whip together heavy cream, powdered sugar, and vanilla bean seeds until stiff peaks form.
  5. Line an 8×8 inch baking pan with parchment paper. Pour half of the caramel into the pan and let cool for about 15 minutes.
  6. Spread the whipped vanilla cream evenly over the cooled caramel layer.
  7. Pour the remaining caramel over the cream layer and refrigerate for at least two hours to set.
  8. Once set, lift out using parchment paper and cut into squares to serve.
