  • 200 ml rapeseed oil
  • 3 cloves garlic
  • 2 tsp sesame oil
  • 12 tbsp black rice vinegar
  • 1 tsp salt
  • 2 tsp brown sugar
  • 1 tsp sweet paprika powder
  • 23 tsp white sesame seeds
  • 3 tsp Sichuan pepper
  • 2 pieces star anis
  • 2 pieces black cardamom
  • 2 pieces bayleaf
  • 1 piece cinnamon
  • 2 nuggets fresh ginger

Instructions

  1. Measure all ingredients to streamline preparation.
  2. In a saucepan, heat rapeseed oil with garlic, star anis, Sichuan pepper, black cardamom, bayleaf, cinnamon, and ginger over medium-low heat until fragrant (10-15 minutes).
  3. In a heatproof bowl, combine Sichuan chili flakes, salt, brown sugar, sweet paprika powder, white sesame seeds, and sesame oil.
  4. Carefully pour the hot oil over the spice mixture while stirring continuously until sizzling.
  5. Allow it to cool completely before straining into a storage jar; discard solids if desired.
