Indulge in the art of baking with these homemade chocolate croissants, known as Pain au Chocolat.   • 4 cups All-Purpose Flour
  • 1/4 cup Granulated Sugar
  • 2 teaspoons Salt
  • 2 teaspoons Instant Yeast
  • 1 1/2 cups Cold Whole Milk or Almond Milk
  • 1 cup Unsalted Butter (softened but cold)
  • 12 pieces Chocolate Batons/Semi-Sweet Chocolate
  • 2 tablespoons All-Purpose Flour (optional for binding)
  • 1 large Egg (or use milk for a vegan option)
  • 1 tablespoon Milk
  • Confectioners’ Sugar (optional topping)

Instructions

  1. In a large bowl, mix flour, sugar, salt, and instant yeast. Gradually add cold milk until a cohesive dough forms. Knead lightly until smooth.
  2. Roll butter between parchment paper into a rectangle. Encapsulate it in the dough by folding over the edges.
  3. Roll out the dough into a large rectangle and perform three folds to create layers. Wrap in plastic wrap and refrigerate for at least one hour.
  4. Roll out chilled dough again and cut triangles from it. Place chocolate batons at the base and roll tightly from base to tip.
  5. Place shaped croissants on a baking sheet lined with parchment paper, cover with a towel, and let proof until doubled in size (about 30-45 minutes).
  6. Preheat oven to 400°F (200°C), brush croissants with egg wash (or milk), and bake for about 15-20 minutes until golden brown.
  7. Allow cooling slightly before dusting with confectioners’ sugar if desired.
