  • ½ cup light brown sugar
  • ½ cup granulated sugar
  • ½ cup sweetened condensed milk
  • ½ cup light corn syrup
  • ½ tsp vanilla extract
  • 2 cups pecan halves
  • 16 oz almond bark or high-quality chocolate

Instructions

  1. Preheat the oven to 350°F (175°C) and toast the pecans on a baking sheet for 5–10 minutes until fragrant. Let cool and chop.
  2. Line another baking sheet with parchment paper or a silicone mat.
  3. In a microwave-safe bowl, melt butter. Stir in brown sugar, granulated sugar, sweetened condensed milk, and corn syrup. Microwave for 6–8 minutes until it reaches 235°F.
  4. Mix in vanilla extract and chopped pecans.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet and refrigerate for about 20 minutes until set.
  6. Melt chocolate in the microwave or using a double boiler; dip each cluster into melted chocolate using a fork.
  7. Place dipped turtles back on parchment paper and let set.
