  • 8 large Granny Smith apples
  • 3 cups caster sugar (600g)
  • â…“ cup water (80ml)
  • ¼ cup liquid glucose (60ml)
  • 1 teaspoon white vinegar
  • Red food coloring

Instructions

  1. Line a large baking sheet with baking paper.
  2. Wash and dry the apples thoroughly, removing any wax.
  3. Insert thick skewers or popsicle sticks into each apple.
  4. In a heavy-based saucepan, combine sugar, water, glucose, and vinegar over low heat until dissolved.
  5. Increase heat and boil until it reaches hard crack stage (150°C / 302°F), using a candy thermometer.
  6. Remove from heat and mix in red food coloring.
  7. Dip each apple into the syrup until well coated.
  8. Place on the lined baking sheet and let cool completely.
