  • 1 tsp. fresh cracked pepper, divided
  • 1 tsp. oregano, divided
  • 1 tsp. garlic powder
  • 1/2 tsp. paprika, divided
  • 8 oz. turkey strips
  • 2 Tbsp. extra virgin olive oil
  • 6 chicken thighs
  • 1 large shallot
  • 3 cloves garlic, grated or pressed
  • 1 cup chicken broth
  • 1 stick of butter
  • 1/2 cup honey
  • 4 sprigs fresh thyme
  • 2 large peaches, sliced
  • Fresh basil and additional fresh thyme for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Season the chicken thighs with salt, pepper, oregano, garlic powder, and paprika.
  2. Cook turkey strips in a sauté pan over medium heat for about 3 minutes; remove and set aside.
  3. In the same pan, sear the seasoned chicken thighs for 1-2 minutes per side until browned; then set aside.
  4. Sauté shallots in olive oil for about 2 minutes, followed by grated garlic for another 2 minutes.
  5. Deglaze the pan with chicken broth, scraping up any brown bits for flavor; cook for approximately 3 minutes.
  6. Add butter and honey to create the sauce, then return the chicken thighs to the pan along with fresh thyme sprigs.
  7. Spoon sauce over the chicken and cover; bake for 15 minutes.
  8. Top with sliced peaches, add more sauce, and broil for an additional 3-5 minutes until peaches are soft.
