Ingredients

For the Chicken Marinade:
1 1/2 pounds boneless, skinless chicken breasts
3 tablespoons olive oil
2 tablespoons honey
2 tablespoons fresh lime juice
2 cloves garlic, minced
1/2 teaspoon chili powder
1/2 teaspoon paprika
Salt and black pepper, to taste

For the Mango Salsa:
1 1/2 cups ripe mango, diced
1/2 red bell pepper, finely diced
1/4 cup red onion, finely chopped
1 small jalapeño, minced (optional)
2 tablespoons fresh cilantro, chopped
1 tablespoon lime juice
Salt, to taste

Optional for Serving:
Cooked rice or quinoa
Lime wedges

Instructions

  • In a bowl, whisk together olive oil, honey, lime juice, garlic, chili powder, paprika, salt, and pepper. Add the chicken and coat evenly. Marinate for at least 30 minutes, or up to 4 hours for deeper flavor.
  • Preheat a grill or skillet over medium-high heat. Cook the chicken for 5–7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C). Let rest for 5 minutes before slicing.
  • In a medium bowl, combine diced mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, and salt. Mix gently to prepare the salsa.
  • Serve the chicken topped with mango salsa. Pair with rice or quinoa and garnish with lime wedges if desired.
