  • 2 bunches celery, chopped
  • 2 large shallots, diced
  • 1 bunch fresh parsley, diced
  • 1 bunch fresh cilantro, diced
  • Handful toasted sunflower seeds
  • Handful chopped pistachios
  • Handful toasted sliced almonds
  • ½ cup dried blueberries or cranberries
  • 2 large lemons, juiced
  • ¼ cup plus 2 tablespoons avocado oil or olive oil
  • 1½ teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • ¼ cup honey

Instructions

  1. Wash and chop the celery into bite-sized pieces. Dice the shallots, parsley, and cilantro.
  2. In a large mixing bowl, combine chopped celery, shallots, herbs, sunflower seeds, pistachios, almonds, and dried fruit.
  3. In another bowl or jar, whisk together lemon juice, avocado oil (or olive oil), salt, pepper, garlic powder, and honey until smooth.
  4. Pour the dressing over the salad mixture and toss gently to combine.
