  • 3 cups red apple vinegar
  • 3 cups beef broth
  • 3 tbsp extra virgin olive oil

  • 2 sprigs fresh thyme
  • 2 leaves fresh sage

  3. Sauté onions, carrots, and garlic in the same pot until softened.

  5. Return beef to the pot, add broth and herbs, ensuring liquid covers one-third of the meat.
  6. Cover and braise in a preheated oven at 285°F (140°C) for 2.5 to 3 hours until fork-tender.
