  • 200 g almond flour
  • 50 g sugar
  • 3 teaspoons fresh orange juice
  • 1 teaspoon orange zest
  • 3 tablespoons orange marmalade
  • 1 tablespoon powdered sugar

Instructions

  1. In a large mixing bowl, whisk together the egg whites and sugar until slightly foamy.
  2. Incorporate the almond flour, orange zest, and juice into the mixture. Stir until you have a smooth dough.
  3. Form small cookie balls using your hands or an ice cream scoop. If too sticky, dust your hands with powdered sugar.
  4. Arrange the cookie balls on a parchment-lined baking sheet and create an indent in each with your thumb.
  5. Fill each indent with orange marmalade.
  6. Chill the cookies in the refrigerator for at least 15 minutes.
  7. Preheat your oven to 175°C (356°F) and bake for about 12 minutes until slightly crispy on the outside but soft inside.
  8. Let cool on a rack and sprinkle with powdered sugar before serving.
