  • 2 boneless skinless chicken breasts
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup all-purpose flour
  • 1 egg (lightly beaten)
  • 1 cup panko breadcrumbs
  • 2 oz Japanese curry roux
  • 1 yellow onion (wedge cut)
  • 1 large russet potato (peeled and diced)
  • 1 large carrot (peeled and diced)
  • 2 cups chicken stock
  • ½ cup water
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 2 cups cooked white rice

Instructions

  1. Season the chicken breasts with salt and pepper. Prepare a breading station with flour, beaten egg, and panko breadcrumbs.
  2. Dredge each chicken breast in flour, dip in egg, then coat with panko breadcrumbs.
  3. Heat vegetable oil in a deep frying pan over medium heat. Fry the breaded chicken for about 4-5 minutes on each side until golden brown. Drain on paper towels.
  4. In another pan, sauté onions in olive oil until translucent. Add potatoes, carrots, garlic, grated apple, chicken stock, water, soy sauce, and honey. Bring to a boil.
  5. Stir in the curry roux until dissolved and simmer until vegetables are tender.
  6. Serve the fried chicken katsu over cooked rice, generously pouring the curry sauce on top.
