  • 23 tbsp rice flour
  • 1 tbsp sugar
  • ¼ tsp salt
  • Shredded mozzarella cheese
  • 12 tbsp oil (for cooking)

  1. Peel and chop the potato into chunks. Steam for 10-15 minutes until soft.
  2. Transfer the steamed potatoes to a bowl. Add rice flour, sugar, and salt, then mash until combined.
  3. Scoop out dough into your palm, flatten it slightly, place shredded mozzarella in the center, wrap the dough around it, and pinch to seal.
  4. Flatten slightly again and heat oil in a frying pan over medium-high heat. Cook each pancake until golden brown on both sides (about 10-12 minutes).
