1 lb Korean radish (Daikon radish)
½ cup distilled white vinegar
½ cup water
3 tablespoons sugar
1 teaspoon salt
2 garlic cloves (optional)
1 teaspoon gochugaru (optional)
Instructions
Rinse the radishes thoroughly, slice off both ends, peel, and cut into even-sized cubes. Place them in an airtight glass jar.
In a small saucepan, combine the vinegar, water, sugar, and salt. Heat over medium until dissolved, then cool to room temperature.
Add garlic and gochugaru to the jar with the radish cubes. Pour the cooled pickling liquid over the radishes until fully submerged.
Seal tightly and refrigerate overnight before enjoying.
