  • 1 1/4 cup all-purpose flour
  • 3/4 cup cake flour
  • 1 tsp cornstarch
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 egg yolk
  • Optional: 1 tsp vanilla extract
  • 2 cups milk chocolate chips

Instructions

  1. Preheat oven to 400°F (204°C).
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt; set aside.
  3. In a stand mixer, cream the cold butter with brown sugar and granulated sugar until light and fluffy. Mix in the egg and egg yolk (and vanilla if using).
  4. Gradually incorporate the dry ingredients until just combined; fold in the chocolate chips.
  5. Measure out six cookie portions (about 5.7 oz each) without flattening them; place on a lined baking sheet.
  6. Bake for 10–12 minutes or until golden brown; allow to cool on the sheet before transferring to a cooling rack.
