These Lemon Bars are a bright and refreshing dessert featuring a buttery shortbread crust topped with a smooth, tangy lemon filling. Perfect for spring and summer, they offer the ideal balance of sweet and citrusy flavors with a soft, melt-in-your-mouth texture.

Ingredients

For the Crust:
1 cup unsalted butter, softened
1/2 cup granulated sugar
2 cups all-purpose flour
1/4 teaspoon salt

For the Lemon Filling:
4 large eggs
1 1/2 cups granulated sugar
1/2 cup fresh lemon juice
1 tablespoon lemon zest
1/2 cup all-purpose flour
Powdered sugar, for dusting

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
  • In a bowl, mix butter, sugar, flour, and salt until a soft dough forms.
  • Press the dough evenly into the prepared pan to form the crust.
  • Bake for 18–20 minutes or until lightly golden.
  • In another bowl, whisk together eggs, sugar, lemon juice, and lemon zest.
  • Add flour to the mixture and whisk until smooth.
  • Pour the lemon filling over the warm crust.
  • Return to the oven and bake for 20–25 minutes until set.
  • Let cool completely, then chill for easier slicing.
  • Dust with powdered sugar before serving and cut into squares.
