  • 1 teaspoon vanilla extract
  • ¾ cup powdered sugar
  • 12 tablespoons milk

Instructions

  1. Make the Lemon Curd: In a double boiler, whisk together egg yolks, sugar, lemon zest, and juice until thickened (about 10 minutes). Stir in cold butter until melted. Let cool.
  2. Prepare Muffin Batter: Preheat oven to 350°F. Combine flour, baking powder, baking soda, and salt in one bowl; set aside. In another bowl, cream butter and sugar, then mix in eggs, yogurt, vanilla extract, lemon zest, and juice. Gradually fold in dry ingredients.
