  • Zest of 1 lemon
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tablespoon culinary lavender, finely ground
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • A few drops of purple food coloring (optional)
  • Thin lemon slices
  • Fresh lavender sprigs

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, cream butter and sugar until light and fluffy. Add egg, vanilla extract, and lemon zest; mix well.
  4. Gradually blend in the dry ingredients until combined. Roll dough to 1/4 inch thick and cut out cookies.
  5. Bake for 8-10 minutes until edges are golden. Cool completely on a wire rack.
  6. For the buttercream, beat softened butter until creamy, then gradually add powdered sugar and lavender until fluffy.
  7. Assemble by spreading buttercream on half the cookies and sandwiching them with the other half.
