  • ¼ cup granulated sugar (+ more for topping)
  • 1 lemons (zested)
  • 3 tbsp fresh lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Prepare the lemons by rinsing them, slicing in half, and scooping out the flesh.
  2. Squeeze the lemon flesh to extract juice and strain it to remove seeds and pulp.
  3. In a saucepan, combine heavy cream, sugar, and lemon zest. Heat gently until sugar dissolves without boiling.
  4. Remove from heat and stir in reserved lemon juice and vanilla extract.
  5. Strain the mixture through a sieve for a smooth texture, then cool for about 10 minutes.
  6. Fill hollowed lemon halves with the mixture and refrigerate for at least 1-2 hours until set.
  7. Before serving, sprinkle sugar on top of each posset and caramelize with a blowtorch.
