  • 6 oz spinach (fresh or thawed frozen)
  • 8 oz cream cheese
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup white cheddar cheese
  • 5 cloves garlic
  • 1/2 cup heavy cream
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp Panko bread crumbs

  2. If using fresh spinach, wash thoroughly; if frozen, thaw and drain. Mix spinach with olive oil in a bowl.
  3. Add minced garlic to the spinach mixture and combine well.
  4. Break cream cheese into chunks and mix with heavy cream until smooth.
  5. Add Parmesan, white cheddar, salt, pepper, and garlic powder to the mixture; stir until blended.
  6. Pour into a baking dish; spread evenly.
  7. Combine Panko breadcrumbs with melted butter and sprinkle over the top.
  8. Bake for about 5 minutes until heated through and golden.
