  • 2 lbs lean ground beef
  • 1 cup ketchup
  • 1 cup barbecue sauce (Sweet Baby Ray's recommended)
  • 30 Ritz Crackers
  • 2 oz onion soup mix
  • 2 eggs
  • 3 cups macaroni noodles
  • 2 cups milk
  • 10.5 oz condensed cheddar cheese soup
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 4 cups shredded mozzarella and cheddar cheese blend

Instructions

  1. Preheat oven to 350°F.
  2. In a bowl, mix ketchup and barbecue sauce; set aside. In another bowl, combine ground beef, crushed Ritz crackers, onion soup mix, eggs, and half the sauce mixture. Blend well.
  3. Spread meatloaf mix in a greased baking dish and top with remaining sauce. Bake for 30 minutes.
  4. Cook macaroni according to package instructions while meatloaf bakes. In a bowl, whisk milk and cheddar soup; add seasonings and cooked macaroni. Mix in shredded cheese.
  5. After meatloaf bakes, layer macaroni topping over it and sprinkle with remaining cheese. Return to oven for another 17-20 minutes until golden.
