  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup ditalini pasta (or other small pasta shape)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions, carrots, and celery for 5-7 minutes until softened. Add minced garlic and cook for an additional minute.
  2. Stir in rinsed cannellini beans, diced tomatoes (with juice), chicken broth, oregano, basil, and red pepper flakes if using. Bring to a simmer.
  3. Reduce heat and let the soup simmer for 20 minutes to meld flavors beautifully.
  4. Add ditalini pasta and cook until tender (about 10-12 minutes), stirring occasionally to prevent sticking.
