Ingredients
Scale
1–1/4 lbs boneless, skinless chicken thighs
1/2 cup gluten-free flour
2 Tablespoons extra virgin olive oil
1 cup chicken broth
1/4 cup chopped pecans
3 Tablespoons pure maple syrup
1 Tablespoon dijon mustard
1 Tablespoon apple cider vinegar
Salt and pepper to taste
Instructions
Season the gluten-free flour with salt and pepper in a shallow dish. Dredge the chicken thighs in the flour and shake off excess.
In a bowl, whisk together the chicken broth, maple syrup, chopped pecans, dijon mustard, apple cider vinegar, and any additional seasoning.
Heat olive oil in a cast iron skillet over medium-high heat. Sear the chicken thighs until golden brown on both sides; they don't need to be cooked through.
Carefully add the sauce mixture to the skillet and bring to a simmer. Nestle the chicken back into the sauce and cover loosely with foil. Simmer for about 10 minutes until fully cooked.
Serve the chicken drizzled with sauce over rice or alongside your favorite vegetables.
