  • 1 can (15 oz) chickpeas
  • 2 lbs carrots
  • 1 tbsp avocado oil for chickpeas
  • 1/2 tsp ground coriander for chickpeas
  • 1/2 tsp sumac for chickpeas
  • Kosher salt
  • Black pepper
  • 3 tbsp avocado oil for carrots
  • 1/2 tsp ground coriander for carrots
  • 1/2 tsp sumac for carrots
  • 10 sage leaves
  • 3 cloves garlic, thinly sliced
  • 1/4 cup pistachios, chopped
  • 3 tbsp maple syrup
  • Juice of half a lemon
  • 4 tbsp thick unsweetened plant-based yogurt
  • 2 tbsp good quality tahini
  • 1 clove garlic, grated
  • Juice and zest of half a lemon
  • 2 tsp maple syrup for yogurt sauce

Instructions

  1. Preheat oven to 425°F (220°C). Dry chickpeas and spread on a parchment-lined baking sheet.
  2. Roast chickpeas for 10 minutes, then toss with oil, spices, salt, and pepper; return to oven for another 20-25 minutes until crispy.
  3. Cut carrots into uniform pieces and toss with oil, spices, salt, and pepper on a separate baking sheet; roast for about 30 minutes, tossing halfway through.
  4. Sauté sage leaves in oil until deepened in color; remove from pan.
  5. Sauté garlic and pistachios in the same pan until fragrant; stir in maple syrup and lemon juice.
  6. Coat roasted carrots with the glaze before serving them over a yogurt sauce.
