  • 1 head cauliflower
  • 1/4 cup red apple vinegar
  • 1/2 cup olive oil
  • 1 red bell pepper
  • 1/3 cup diced red onion
  • 1/2 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • 1 Tbsp Italian seasoning
  • 2 Tbsp chopped fresh parsley
  • 1 tsp Dijon mustard
  • 1/4 tsp garlic powder
  • 2 Tbsp grated Parmesan
  • 1 2.25oz. can sliced black olives
  • 1/2 12oz. jar banana pepper rings

Instructions

  1. In a jar or bowl, whisk together olive oil, red apple vinegar, Dijon mustard, garlic powder, Italian seasoning, salt, black pepper, and grated Parmesan until well combined.
  2. Chop the cauliflower into small florets and place them in a large mixing bowl with sliced black olives, banana pepper rings, diced red bell pepper, diced red onion, and chopped parsley.
  3. Pour the dressing over the salad ingredients and toss until everything is well coated.
  4. Refrigerate for at least 30 minutes before serving to allow flavors to develop.
