Ingredients


6 cups celery, thinly sliced (about 1 large bunch)
1/4 cup red onion, thinly sliced
1/4 cup fresh parsley, chopped
2 tablespoons fresh dill, chopped (optional)

For the Marinade:
3 tablespoons olive oil
3 tablespoons apple cider vinegar
1 tablespoon lemon juice
1 teaspoon honey or sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon Dijon mustard

Instructions

  1. Wash and thinly slice the celery stalks, including some of the tender leaves if available. Place them in a large mixing bowl.

  2. Add the sliced red onion, chopped parsley, and dill to the bowl with the celery.

  3. In a small bowl, whisk together olive oil, apple cider vinegar, lemon juice, honey, salt, black pepper, and Dijon mustard until well combined.

  4. Pour the marinade over the celery mixture and toss thoroughly so everything is evenly coated.

  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to develop and the celery to soften slightly.

  6. Toss again before serving and adjust seasoning if needed.
