  • 2 teaspoons salt
  • 2 tablespoons white vinegar
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 1/3 cup honey
  • 1/4 small yellow onion (diced)
  • 4 garlic cloves (minced)
  • 2 stalks scallions (minced)
  • 1 Korean red pepper (sliced)
  • 1 serrano pepper (sliced)
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Soft boil the eggs by bringing water to a boil with salt and vinegar. Carefully lower the room-temperature eggs into the water and simmer for 6 minutes.
  2. Transfer the boiled eggs to an ice bath for 10 minutes to cool before peeling.
  3. In a mixing bowl, combine soy sauce, water, honey, diced onion, minced garlic, scallions, sliced peppers, and sesame seeds to create the marinade.
  4. Place peeled eggs in an airtight container and pour the marinade over them until fully submerged. Marinate in the refrigerator for at least 6 hours or overnight for best results.
  5. Serve with freshly cooked rice drizzled with sesame oil for added flavor.
