  • 2 boneless chicken breasts
  • 1 tbsp olive oil
  • Juice of lemon
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • 1 cup cooked basmati rice
  • 1 cucumber, sliced
  • 1 cup canned chickpeas, rinsed & drained
  • Fresh dill for garnish
  • 1 cup Greek yogurt
  • 1 cucumber, grated & squeezed
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon juice
  • Optional: pinch of chili flakes

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken breasts and coat well; let marinate for at least 10 minutes.
  2. Cook the Chicken: Preheat your grill or skillet over medium-high heat. Grill each side of the chicken for about 5-6 minutes until fully cooked (internal temperature of 165°F). Remove from heat and slice.
  3. Prepare Tzatziki: Mix Greek yogurt with grated cucumber (drain excess moisture), minced garlic, fresh dill, lemon juice, salt, and pepper until well combined.
  4. Assemble Bowls: Start with a base of basmati rice in each bowl. Top with sliced cucumber, chickpeas, grilled chicken strips, and tzatziki sauce. Garnish with fresh dill.
