  • ⅓ cup diced red onion
  • 1 cup chopped spinach
  • ½ cup feta cheese
  • 1 cup shredded mozzarella cheese
  • 3 burrito-style flour tortillas
  • 1 tablespoon cooking oil

Instructions

  1. In a mixing bowl, combine the diced tomato, red onion, chopped spinach, feta cheese, and shredded mozzarella cheese. Mix gently to combine.
  2. Lay each tortilla flat and spread one-third of the filling onto one half of each tortilla. Fold over to create a half-moon shape.
  3. Heat oil in a non-stick skillet over medium heat. Cook each quesadilla for 3-4 minutes on one side until golden brown; then flip and cook the other side for another 3-4 minutes until the cheese melts.
  4. Remove from heat, cut into wedges, and serve immediately with your choice of toppings like salsa or sour cream.
