  • 23 pounds chuck roast or brisket
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup beef broth (or chicken broth)
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • Salt and pepper, to taste
  • Juice of 1 lime
  • Corn or flour tortillas for serving

Instructions

  2. Season the chuck roast with salt, pepper, chili powder, cumin, smoked paprika, and oregano.
