  • 115 g unsalted butter
  • 135 g light brown sugar
  • 55 g granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 275 g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tbsp cornflour
  • 100 g milk chocolate chips
  • 100300 g mini eggs

Instructions

  1. Preheat your oven to 190ºC (or 170ºC for fan ovens) and line a 9×9 inch baking tray with parchment paper.
  2. In a mixing bowl, combine melted butter with light brown sugar and granulated sugar until well mixed.
  3. Incorporate the medium egg and vanilla extract, mixing until smooth.
  4. Add plain flour, cornflour, bicarbonate of soda, and salt; stir until just combined.
  5. Fold in milk chocolate chips and most of the mini eggs.
  6. Transfer dough into the lined baking tray; press down evenly and decorate with remaining mini eggs.
  7. Bake for 18–22 minutes until the top looks dry but soft.
  8. Allow to cool completely before cutting into bars.
