  • 4 slices turkey bacon, cut into small pieces
  • 1 tablespoon miso paste
  • 1 teaspoon red chili flakes
  • 1 teaspoon freshly ground black pepper
  • ½ cup hot reserved pasta water
  • 2 eggs
  • 2 egg yolks
  • 1 cup parmigiano reggiano cheese (plus more for garnish)
  • Finely chopped green parsley for garnish

Instructions

  1. Cook spaghetti in salted boiling water until al dente, reserving ½ cup of hot pasta water before draining.
  2. In a skillet over medium heat, cook turkey bacon until crispy (5-7 minutes). Set aside.
  3. Whisk eggs, yolks, miso paste, red chili flakes, black pepper, and half the cheese in a mixing bowl.
  4. Combine hot spaghetti with turkey bacon in the skillet over low heat. Quickly add the egg mixture and toss; use reserved pasta water for creaminess.
  5. Stir in remaining cheese until melted and serve immediately with parsley garnish.
