  • 1 cup glutinous rice flour (mochiko)
  • ¼ cup granulated sugar
  • ¾ cup water
  • 8 small-to-medium fresh strawberries (hulled and dry)
  • 1 cup sweet red bean paste or vanilla cream (whipped cream with powdered sugar + vanilla)
  • ½ cup potato starch or cornstarch

Instructions

  1. Wash, hull, and dry strawberries thoroughly.
  2. Coat each berry in red bean paste or whipped vanilla cream and chill briefly.
  3. In a mixing bowl, combine glutinous rice flour, sugar, salt, and water until smooth. Microwave in short bursts or steam until glossy and stretchy.
  4. Cool the dough slightly on a well-starched surface. Cut into 8 equal pieces.
  5. Flatten each piece into a circle and wrap around each strawberry carefully, sealing at the top.
  6. Allow mochi to rest for about 10 minutes before brushing off excess starch.
  7. Serve at room temperature or chilled.
