  • 2 tablespoons olive oil
  • 1/2 yellow onion (diced)
  • 1 jalapeño (diced, seeds removed if too spicy)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 2 cloves garlic (finely chopped)
  • 1 teaspoon sweet paprika
  • 1/4 teaspoon cayenne
  • Salt and pepper to taste
  • 2 pounds firm white fish (like cod)
  • 2 vine tomatoes (chopped) or 1 can chopped tomatoes
  • 2 cups seafood stock or vegetable stock
  • 13-ounce can coconut milk
  • Zest of 1 lime + lime wedges for serving
  • Green onions for garnish

Instructions

  1. Heat coconut oil and olive oil in a large pot over medium heat. Add onion and jalapeño; sauté until softened.
  2. Stir in sliced bell peppers and cook for another few minutes.
  3. Add garlic, paprika, and cayenne; sauté until fragrant.
  4. Incorporate chopped tomatoes and cook until juices are released.
  5. Pat the fish dry, season with salt and pepper, and place on top of vegetables.
  6. Pour in coconut milk and stock; add lime zest. Gently stir without disturbing the fish.
  7. Cover partially; simmer for about 10–15 minutes until the fish is cooked through.
  8. Taste for seasoning adjustments; serve over jasmine rice garnished with green onions and lime wedges.
