  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander

  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 garlic cloves (minced)
  • Juice and zest of 1 lemon
  • 1 onion (finely chopped)
  • 1 cup chicken broth

Instructions

  1. In a mixing bowl, combine olive oil, cumin, coriander, cinnamon, smoked paprika, turmeric, salt, black pepper, minced garlic, lemon juice, and lemon zest to create the marinade.
  2. Add chicken thighs to the marinade and ensure they are well coated. Cover and let marinate for at least one hour or overnight for enhanced flavor.
  3. Preheat the oven to 400°F (200°C).
  4. In an oven-safe skillet, heat olive oil over medium heat and sauté chopped onions until translucent (about 5-7 minutes).
  5. Sear marinated chicken thighs skin-side down in the skillet for about 5 minutes until golden brown; then flip.
  6. Pour in chicken broth until it covers the chicken halfway; add optional dried apricots or olives if desired.
  7. Transfer skillet to preheated oven and bake for 30-35 minutes or until chicken reaches an internal temperature of 165°F (75°C).
  8. Allow resting before serving; garnish with fresh parsley and cilantro.
