  • 50 g white sugar (for caramel)
  • 60 ml water (for caramel)
  • 300 ml whole milk
  • 50 g white sugar (for custard)
  • 7 g vegan gelatin powder
  • 3 pasteurized eggs
  • 100 ml heavy cream
  • ½ tsp vanilla essence

Instructions

  1. In a microwavable container, combine the whole milk, 50 g of sugar, and vegan gelatin powder. Mix well and let sit for 5-10 minutes.
  2. To make the caramel, heat 50 g of sugar and 60 ml of water in a saucepan over medium heat until golden brown. Remove from heat.
  3. Microwave the milk mixture until warm but not boiling (about 1-2 minutes). In another bowl, whisk the eggs and slowly add the warm milk mixture while whisking continuously.
  4. Stir in the heavy cream and vanilla essence until fully combined.
  5. Pour a layer of caramel into serving dishes, then carefully pour the custard mixture on top.
  6. Refrigerate for at least 3 hours to set before serving.
