  • 250 grams plain flour
  • 100 grams caster sugar
  • 2½ teaspoons baking powder
  • ½ teaspoon bicarbonate of soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 clementines (juice and zest)
  • 125 milliliters full-fat milk
  • 75 milliliters vegetable oil
  • 1 large egg
  • 175 grams dried cranberries
  • 3 teaspoons demerara sugar (for topping)

Instructions

  1. Preheat your oven to 200°C (180°C Fan) and line a muffin tin with muffin papers.
  2. In a large bowl, combine the flour, baking powder, bicarbonate of soda, caster sugar, cinnamon, and nutmeg.
  3. Zest the clementines directly into the dry mix.
  4. In a jug, squeeze the juice from the clementines and add milk until you reach a total volume of 200ml. Mix in vegetable oil and egg, then lightly beat together.
  5. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  6. Fold in dried cranberries.
  7. Spoon the batter into muffin cases and sprinkle demerara sugar on top.
  8. Bake for about 20 minutes until golden brown.
