  • 1 pound Ground beef
  • 15 oz Great Northern Beans (drained & rinsed)
  • 15 oz Kidney Beans (drained & rinsed)
  • 14 oz Diced Tomatoes (with juices)
  • 8 oz Tomato Sauce
  • 2 tbsp Tomato Paste (diluted in about 4 tbsp water)
  • 1 cup Onion (roughly chopped)
  • 1.5 tbsp Garlic (minced)
  • 3/4 cup Carrot (roughly cubed)
  • 3/4 cup Celery (roughly chopped)
  • 1 cup Ditalini Pasta
  • 3 tbsp Olive Oil
  • Salt (to taste)
  • 1 tsp Paprika
  • 1/4 tsp Oregano
  • 1/2 tsp Italian seasoning
  • 1.5 tsp Ground Black Pepper
  • 1/2 tsp Red pepper flakes
  • 1 tbsp Worcestershire sauce (or alternative)
  • 6 cups Chicken stock
  • Parsley (fresh, chopped)
  • Extra Virgin Olive Oil (for drizzling)

Instructions

  1. Set the Instant Pot to SAUTE on HIGH heat. Add olive oil and ground beef; sauté until browned.
  2. Stir in chopped onion and garlic; sauté for about one minute until fragrant.
  3. Add carrots and celery; stir well and sauté for another minute.
  4. Pour in chicken stock, scraping the bottom to de-glaze the pot.
  5. Add seasonings, including paprika, oregano, Italian seasoning, Worcestershire sauce, red pepper flakes, and salt; mix thoroughly.
  6. Incorporate diced tomatoes (with juices), tomato paste (diluted), rinsed beans, and pasta; stir well.
  7. Cancel SAUTE mode and seal the lid. Pressure cook on HIGH for 4 minutes.
  8. Perform a quick release of pressure before opening the lid carefully.
  9. Serve immediately, garnished with parsley and drizzled with extra virgin olive oil.
