  • 1 cup onion
  • 1 cup celery
  • 1 cup carrot
  • 1 tablespoon garlic
  • 3 cans beef broth (14.5 ounces each)
  • 1 can diced tomatoes (14.5 ounces)
  • 1 can tomato sauce (8 ounces)
  • 1 cup ditalini pasta
  • 2 cans beans (kidney and cannellini)

Instructions

  1. Chop the onion, carrots, celery, and garlic.
  2. Rinse and drain the kidney and cannellini beans.
  3. In a large pot over medium-high heat, brown the ground beef until fully cooked, then drain excess fat if necessary.
  4. Add the chopped vegetables to the pot and cook for about 5 minutes until they soften. Stir in garlic and Italian seasoning; cook for an additional minute.
  5. Pour in beef broth, diced tomatoes, tomato sauce, salt, pepper, and ditalini pasta; bring to a boil.
  6. Reduce heat to medium-low and simmer for about 7 minutes before adding rinsed beans.
  7. Continue cooking until the pasta is tender (5-8 more minutes). Serve hot.
