  • 1 cup boiling water
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 2 large eggs
  • Zest of 2 oranges
  • 1/2 cup fresh orange juice
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp ground cardamom
  • 1/4 tsp salt
  • 1/4 cup honey
  • 1 tbsp fresh orange juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch cake tin.
  2. In a bowl, whisk together flour, baking powder, ground cardamom, and salt.
  3. In another bowl, cream butter and brown sugar. Add eggs, vanilla extract, orange zest, and juice; mix until combined.
  4. Fold in chopped dates and combine wet and dry ingredients gently.
  5. Pour batter into the prepared tin and bake for 40–45 minutes or until a toothpick comes out clean.
  6. For the honey drizzle, warm honey and orange juice until smooth; drizzle over the warm cake.
