  • 1/4 cup superfine sugar
  • 1 and 1/2 cups chilled whole milk
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup unsalted butter (softened to room temperature)
  • 4 cups all-purpose flour (plus extra for rolling and shaping)
  • 2 teaspoons sea salt
  • 1 bar dark chocolate (roughly chopped)
  • 2 tablespoons whole milk for egg wash
  • 1 large egg for egg wash
  • Powdered sugar for dusting

Instructions

  1. Activate yeast by mixing warm milk with yeast; let sit until frothy.
  2. In a large bowl, whisk together flour, sugar, salt, and cinnamon. Make a well in the center.
  3. Pour yeast mixture and softened butter into the well; mix until dough forms.
  4. Knead dough on a floured surface for about 10 minutes until smooth, then let rise until doubled.
  5. Roll out dough into a rectangle; sprinkle chopped chocolate over half and fold over to encase.
  6. Cut into triangles and roll from the wider end to shape croissants.
  7. Place on parchment-lined baking sheets to rise again until puffy.
  8. Preheat oven to 375°F (190°C). Brush with egg wash and bake for about 20 minutes until golden.
  9. Cool slightly and dust with powdered sugar before serving.
