  • 3 tablespoons olive oil (divided)
  • 1 pound ground beef
  • 1 onion (diced)
  • 2 carrots (diced)
  • 2 stalks celery (diced)
  • 5 cloves garlic (minced)
  • 3 cups tomato sauce
  • 4 cups chicken stock
  • 15 ounces fire roasted tomatoes (do not drain)
  • 1 tablespoon Italian Seasoning
  • 1 cup dry pasta (I use ditalini)
  • 15 ounces red kidney beans (drained and rinsed)
  • 15 ounces cannellini beans (drained and rinsed)
  • 1/2 teaspoon salt
  • 1/4 teaspoons pepper
  • 1/4 cup fresh parsley (chopped finely)

Instructions

  1. In a large Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Add ground beef and cook until browned. Remove meat and drain excess fat.
  2. In the same pot, add remaining olive oil and sauté diced onion, carrots, and celery until softened.
  3. Stir in minced garlic and cook for another 30 seconds until fragrant.
  4. Add chicken stock, tomato sauce, fire-roasted tomatoes, Italian seasoning, cooked meat, and ditalini pasta into the pot.
  5. Bring to a boil, then reduce heat. Cover and let simmer for about 15 minutes until vegetables are tender and pasta is cooked.
  6. Stir in drained kidney beans and cannellini beans; heat through.
  7. Season with salt and pepper to taste before serving.
