  • 1 lb. Red Kidney Beans (soaked overnight)
  • 1 lb. Cannellini Beans (soaked overnight)
  • 8 cups Chicken Stock
  • 3 Carrots, sliced
  • 3 stalks of Celery, diced
  • 1 Onion, diced
  • 46 cloves of Garlic, minced
  • 1 qt. Tomato Juice
  • 1 can Diced Tomatoes (15 oz.)
  • 1 lb. Ditalini Pasta (or any small cut pasta)
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 1 tsp. Thyme
  • 1 tsp. Basil
  • 1 tsp. Oregano

Instructions

  1. Heat a large heavy pot over medium-high heat.
  2. Sauté the kielbasa in oil until browned.
  3. Add onion and cook until translucent; then add carrots and celery until tender.
  4. Stir in garlic and seasonings until fragrant.
  5. Pour in tomato juice, diced tomatoes, and chicken stock; bring to a boil.
  6. Add soaked beans; reduce heat to simmer for about 45–60 minutes until beans are tender.
  7. Incorporate pasta and cook for an additional 10–12 minutes until al dente.
  8. Adjust seasoning if necessary before serving warm.
