  • 1 cup pineapple, cut into cubes

  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken cubes and cook until golden brown and fully cooked (about 5-7 minutes). Remove chicken from the skillet.
  2. In the same skillet, sauté onion, garlic, and red bell pepper for approximately 3-4 minutes until softened.
  3. Stir in pineapple chunks and cook for an additional 2 minutes.
  4. Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper to the skillet. Bring to a boil.
  5. Lower heat, cover with a lid, and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
  6. Return cooked chicken to the skillet and mix well for about 2-3 minutes to heat through.
  7. Garnish with sliced green onions and sesame seeds before serving.
