  • 1 lb boneless skinless chicken breast, diced
  • 1 tbsp olive oil, for cooking
  • Salt and pepper, to taste
  • 1 bell pepper, diced
  • 1 can (15 oz) pineapple chunks, drained (reserve ¼ cup juice)
  • 2 cups cooked white rice
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • ½ tsp garlic powder
  • ½ tsp ground ginger
  • Optional garnishes: green onions or sesame seeds

Instructions

  1. Prepare all ingredients by dicing the chicken and bell pepper, and draining the pineapple chunks while reserving ¼ cup of juice.
  2. Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and cook for 6–8 minutes until browned.
  3. Stir in the diced bell pepper and cook for an additional 2–3 minutes until tender.
  4. Add pineapple chunks to the skillet and cook for 2 minutes.
  5. In a small bowl, whisk together reserved pineapple juice, soy sauce, honey, garlic powder, and ground ginger. Pour into the skillet.
  6. Simmer uncovered for 4–5 minutes until the sauce thickens slightly.
  7. Serve over cooked white rice; garnish with optional green onions or sesame seeds.
