  • 1.5 lbs boneless skinless chicken breasts
  • 20 oz canned pineapple chunks
  • ½ cup low sodium soy sauce
  • ½ cup pineapple juice
  • 2 tbsp packed brown sugar
  • 2 tbsp honey (or pure maple syrup)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 tsp minced fresh ginger
  • 3 cloves garlic (minced)
  • 1.5 tbsp cornstarch
  • 2.5 tbsp avocado oil or olive oil (divided)
  • Salt and pepper (to taste)
  • 1 small red onion (chopped into 1-inch pieces)
  • 1 red bell pepper (chopped into 1-inch pieces)
  • 4 cups broccoli florets (chopped into small bite-size pieces)
  • Cooked rice (optional)
  • Chopped green onions (optional)

Instructions

  1. In a medium bowl, whisk together the soy sauce, pineapple juice, brown sugar, honey, rice vinegar, sesame oil, ginger, garlic, and cornstarch until well combined.
  2. Heat 1 tbsp of oil in a large skillet over medium-high heat. Add the chicken pieces seasoned with salt and pepper; cook until browned and cooked through (about 7-10 minutes). Transfer to a plate.
  3. In the same skillet, add remaining oil along with red onion, bell pepper, and broccoli; stir-fry for about 4 minutes until vegetables are crisp-tender.
  4. Return chicken to the skillet, add pineapple chunks, then pour in the teriyaki sauce. Stir frequently until sauce thickens slightly (1-2 minutes). Remove from heat.
  5. Serve over cooked rice or quinoa as desired.
